Greg Norman Estates Launches New Zealand Sauvignon Blanc
New Zealand Sauvignon Blanc
Greg Norman’s passion for fine wine was the genesis behind the launch of Greg Norman Estates in 1996. An avid wine collector and strong believer in the role of wine in an active, easygoing lifestyle, Greg’s aim is to produce approachable wines from outstanding appellations across the world. It is with this focus that Greg Norman Estates is pleased to introduce its latest wine to the portfolio; a Sauvignon Blanc from the Marlborough region of New Zealand. The Marlborough region, located in the northeast of the South Island in New Zealand is like none other in the world and is well known for growing outstanding Sauvignon Blanc. Strong diurnal temperatures allow the sun-loving Sauvignon Blanc to ripen to the fullest but the very cool evenings ensure the grapes retain their bright acidity. The unique and distinct flavor profile is the hallmark of the region and a favorite among wine drinkers.

This inaugural 2014 vintage of the Greg Norman Estates Marlborough Sauvignon Blanc, which will begin to arrive on US shelves in April, offers bright and generous flavors of grapefruit, lime and tropical notes of pineapple and passion fruit. The wine is light and flavorful on the palate with balanced, refreshing acidity. This is an elegant style of New Zealand Sauvignon Blanc and incredibly food friendly.

This new wine complements the existing Greg Norman Estates portfolio of classic wines from both Australia and California which are well known for over delivering in quality at a tremendous value.

Speaking of over delivering…check out our hot new scores from Wine Spectator:

2012 Limestone Coast Cabernet-Merlot
“Supple and inviting, with cherry flavors at the core and hints of herb around the edges, persisting harmoniously on the precise finish. Drink now through 2019.”
- Harvey Steiman, Wine Spectator
90 Points
2012 Limestone Coast Reserve Shiraz
“Firm but not chewy, with an upright feel to the cherry and boysenberry flavors, shaded by mint and rosemary notes as the narrow finish lingers.”

The Valero Texas Open has a lot to celebrate with the conclusion of the 2015 edition of the tournament. Sunday afternoon during the final round, Lane Riggs (Executive Vice President of Refinery Operations and Engineering for Valero and this year’s Tournament Chair) announced on NBC that the tournament raised an astounding $10.4 million for charity. This brings the overall charitable total, since Valero became title sponsor in 2002, to $100.4 million making it only the fourth PGA TOUR tournament to achieve this monumental charitable milestone.

FedEx Cup point’s leader and Boerne, Texas resident Jimmy Walker began the day four strokes ahead of Jordan Spieth. Despite a pair of early bogeys on holes 4 and 7 his lead was never threatened and he concluded the round with a 2-under-par 70 and a four-stroke victory over Spieth for his second victory of the 2014-15 campaign.

With his win, Walker earned his fifth career PGA TOUR victory with previous wins at the 2013 Frys.comOpen, 2014 Sony Open in Hawaii, 2014 AT&T Pebble Beach National Pro-Am and 2015 Sony Open in Hawaii. He also became the season’s first multiple winner for the second season in a row.

Walker is the eighteenth player with Texas ties (native/resident) to claim this event and fifth player since 2000, joining Steven Bowditch (2014), Justin Leonard (2000, ’01, ’07), Bart Bryant (2004), and Tommy Armour III (2003).

We want to congratulate Jimmy Walker on his latest victory and recognize the Valero Texas Open for reaching such an impressive charitable milestone.

How to Perfectly Cook a Wagyu Steak
(Is Your Mouth Watering Yet?)
Wagyu SteakMWagyu Steak

Greg Norman Australian Prime shares the secret to the most delicious piece of meat in the world below.

1. 230g (8 oz.) is an ideal size for a Wagyu steak.
Wagyu steaks (AAco grade AA5+) such as Sirloin and Ribeye contain 15 to 25% marbling fat. When cooked, this provides for a wonderfully rich and fulfilling experience.

2. Season Wagyu steaks prior to cooking.
Add liberal pinches of sea salt into the hot pan before adding the Wagyu steak. Then sprinkle sea salt on the remaining exposed surface of the steak. The sizzle of sea salt combined with the marbling fat produces a "to die for" caramelized crust that should appear on every perfectly cooked Wagyu steak.

3. Pan sear and avoid char-grilling Wagyu steaks.
Choose a ceramic, titanium coated non-stick pan with a griddle. The griddle helps to keep the steak above the melted marbling fat in the final stages of cooking and adds signature grill lines for decoration. It also prevents "poaching" the Wagyu. When outdoors, the best alternative is to use an Exlan coated, Topnotch stainless steel BBQ plate.

4. Marbling fat is the only oil that should be used.
Wagyu steak has its own marbling coating. Adding butter or oil to the pan introduces flavors that can mask or conflict with the delicate taste of Wagyu steak.

5. Cook steak to medium. Avoid under cooking.
Heat should penetrate through all marbling seams of the Wagyu steak for it to reach the optimum flavor point. It is best to have the pan heated to high before adding the steak. Sear both sides for 2 minutes each, and then reduce heat to the pan to medium-low. Allow the steak to finish cooking under this reduced heat for approximately 3 to 5 minutes, turning occasionally.

6. Serve Wagyu steaks on pre-warmed plates.
The perfect Wagyu steak should be served straight from the pan onto a pre-warmed plate. Keeping the steak warm ensures the taste from the marbling fat remains at its peak flavor point.

Buon appetito!

Ask Greg
Q. “Has the chainsaw accident effected your golf, do you still play?” – Paul M. Queensland, Australia

A. I still have some numbness and should have full feeling back in my hand and wrist within the next 3-5 months. I have played and will continue to play even with this minor distraction!

Q. “Are you planning on playing in any tournament in the future or are you going to focus exclusively on your businesses within Great White Shark Enterprises and on your personal life?” – Ron P. Cleveland, Ohio

A. No immediate plans to return to tournament golf, but I never say never! There has been some speculation about my return to the Open Championship this year, but at this time, due to my commitments with FOX and the USGA, there likely won’t be time to prepare. I have really enjoyed the additional time I have had for myself and my family since curtailing my golf schedule (less time practicing, playing). I continue to dedicate more time to my business schedule as Great White Shark has a huge opportunity for expansion and potential in the next decade and beyond.
